For this vacation special we followed the trailblazing restaurateurs of Espadon into the jungle paradise around San Juan Del Sur, Nicaragua. John Mike Leblond (Montreal Chef), Jessica Midlash (Sommelière, Le Garde-Manger) and Benjamin Powlesland (Mixologist, Toronto) recently hosted the pop-up venue of Espadon Nicaragua, a sea & farm to table concept where both locals and travellers could enjoy their take on the freshest produces and recipes.

This 3 months operation got them to get familiar with the close-knit community of local entrepreneurs who are currently shaping the eco-tourism scene of San Juan, sprawling a web of amazing boutique-hotels, yoga retreats, microbreweries, restaurants and expeditions.

Everywhere we went, I heard of land acquisition deals, construction schedules and development projects. The energy was more than palpable. Those ventures are obviously not always easy. There is after all no treasure map to where these entrepreneurs are going.
